Peter's Wine Pick Of The Month
Conundrum is owned by the Wagner family of Caymus Vineyards, but stands on its own as a separate brand. A perfect blend of California white grapes make it the perfect wine, any time.

Food For Thought
Spring has arrived. For those in the kitchen, from the novice cook to a chef, spring means fresh fruits and vegetables. Fresh peas and baby carrots take the place of sprouts and mushrooms, the delightful smells of mint and tarragon fill the air and fruits like berries and apricots find their way into savory dishes. Even the most passionate of chefs will say they are cheating themselves out of a world of culinary possibilities, by not using seasonal foods.
The advantages to cooking with seasonal ingredients are endless and shopping is actually more cost-effective. The produce tastes richer, fresher, and is more nutritious. Finally, buying not only seasonally, but locally, is yet another step in our never-ending quest to show the benefits of a sustainable lifestyle.

Recipe For A Great Spring Seafood Saute
Shrimp 3 each
Scallops 2 each
Mussels 3 each
Fresh Fish, Cubed 3 oz
Jumbo Lump Crab 2 oz
Crispy Calamari 2 oz
Spring Peas 2 oz
Tomatoes, diced 3 oz
Roasted Fennel 2 oz
Garlic 1 Tbl
Shallots 1 Tbl
White Wine 4 oz
Clam Juice 8 oz
Butter, Unsalted 3 oz
METHOD: In a medium heat saute pan, add oil, saute shrimp, scallop and fish. When they are half way done, turn them and add the garlic and shallots. Then add the mussels and all vegetables (leave out the peas). Toss the pan, and de glaze with white wine. Reduce it by half and add the clam juice. Place the entire pan in the oven for approximately 8-10 minutes. Remove from the oven and season to taste. "Mount" the butter in, by whisking it into the broth. Add the peas and crab in last and heat them through. Enjoy :)
