Peter's Wine Pick Of The Month

to almost any type of food and will not disappoint.

Food For Thought
As summer is approaching, it is time to start thinking about cooking outdoors. Here are some fun tips to help you prepare that perfect grilled steak.
  • Always buy the best quality meat possible. Purchase from a reputable butcher or supplier.
  • Turn the grill on high with the lid closed for at least 20 minutes to ensure your grill is very hot. Be sure to clean the grill thoroughly so no unwanted flavors are transferred.
  • For extra smoke flavor try adding some mesquite or hickory wood chips to the fire. Soak the chips in water for an hour; this will help
    them smoke and smolder, rather than just flare up and burn away.
  • Oil your meat before grilling. I use vegetable oil or soybean oil. You want something that’s fairly neutral in flavor and also won’t burn too fast on the grill.
  • Seasonings can vary from simple salt and pepper to a variety of steak salts, seasonings and rubs. I tend to steer away from too much seasoning and just let the ingredients speak for themselves.
  • Place the steak carefully on the grill and LEAVE IT ALONE for about 1 ½ - 2 minutes. The first novice mistake is trying to move or flip the steak too early, and it sticks to the grill. Be patient, it will pay off.

Grilled “Day Boat” Atlantic Swordfish
Spinach, Grape Tomatoes & Herbed Salsa Verde
7 oz Day Boat Swordfish fillet
4 oz Sautéed Wilted Spinach
2 oz Heirloom Grape Tomatoes
1 oz Salsa Verde
Herb Salsa Verde (Yield 18 oz)
2 oz Chopped Green Onion
1 oz Dill, chopped
½ oz Tarragon, chopped
1 oz Basil, chopped
½ oz Mint, chopped
1 oz Chives, chopped
1 oz Parsley, chopped
1 oz Thyme, chopped
1 oz Champagne Vinegar
4 oz Olive Oil
4 each Lime, Squeezed

METHOD:
  • Heat grill on high for approx 15-20 minutes. Be sure grates are clean and lightly coat them with a pan spray.
  • Season the swordfish with salt and pepper and lightly rub a olive oil around the entire fillet.
  • Grill the swordfish on both sides, then transfer it to a pan with a little white wine and butter and finish cooking in the oven.
  • Chop and mix all the ingredients together in a bowl, leaving the olive oil, lime juice and vinegar for last. Cover in the refrigerator until ready to use.
To Finish the plate:
Place the swordfish on top of the wilted spinach and scatter the grape tomatoes around. Finish by spooning the herbed salsa verde over the fish and enjoy :)
