Peter's Wine Pick Of The Month
One of my favorite wines by the glass
that we offer is Patricia Green Sauvignon Blanc. A perfect wine for that hot, summer afternoon, eating a light crisp salad for
lunch or just sipping at the bar for Happy Hour. The cost by the glass is $13.00
and well worth it.
Flavors include lots of creamy white peach, delicate citrus, sweet lime, and bright hints of wet stone in the finish. The refreshing, racy acidity lifts the wine like a cool breeze and calls for another sip of this delightful wine. Patty always makes a nice Sauvignon Blanc, this is an exceptionally good example of her work.

Food For Thought
As summer is approaching, it is time to start thinking about cooking outdoors. Here are some fun tips to help you prepare that perfect grilled steak.
  • Always buy the best quality meat possible. Purchase from a reputable butcher or supplier.
  • Turn the grill on high with the lid closed for at least 20 minutes to ensure your grill is very hot. Be sure to clean the grill thoroughly so no unwanted flavors are transferred.
  • For extra smoke flavor try adding some mesquite or hickory wood chips to the fire. Soak the chips in water for an hour; this will help
    them smoke and smolder, rather than just flare up and burn away.
  • Oil your meat before grilling. I use vegetable oil or soybean oil. You want something that’s fairly neutral in flavor and also won’t burn too fast on the grill.
  • Seasonings can vary from simple salt and pepper to a variety of steak salts, seasonings and rubs. I tend to steer away from too much seasoning and just let the ingredients speak for themselves. If a steak is cooked properly, the natural sugars are caramelized and form a crust which yields an amazing flavor.
  • Start Grilling. Find an area on the grill that gives off an even, constant heat. Place the steak carefully on the grill and LEAVE IT ALONE for about 1 ½ - 2 minutes. The first novice mistake is trying to move or flip the steak too early, and it sticks to the grill. Be patient, it will pay off.
  • Grill a ½ temperature below your desired final temperature and let your meat REST for about 5 minutes. This is the most important step when trying to achieve a flavorful and more importantly MOIST steak. All the flavorful juices that have been stressed out by the heat, need to relax and distribute themselves throughout the meat again.
  • One of my favorite things to do is brush the steak with some whole melted butter before it goes on the plate. The butter really adds great flavor to that crust, and helps soften up the outside of the meat a little.

Recipe For Pan Seared Pacific Ahi Tuna
Chef’s Garden Organic "Roasted Roots"
Golden Fingerling Potatoes, Key Lime - Ponzu Butter
7oz Tuna Filet
5oz Mixed Organic Root Vegetables
1oz Grape Tomatoes
1oz Baby Spinach
3oz Golden Fingerling Potatoes, Roasted
3oz Key Lime Ponzu Butter
Key Lime Ponzu (Yields 2.5 Cups)
1 Cups Soy Sauce (Light)
1/4 Cup Rice Wine Vinegar
3/4 Cup Mirin
1/4 Cup Orange Juice
1/4 Cup Lemon Juice
1/4 Cup Key Lime Juice
1/2 Cup Sugar
METHOD: Place all ingredients in a pot and reduce for 10 minutes on medium heat. Strain and cool.
Key Lime Ponzu Butter Recipe (Yields 32oz) 2 oz Key Lime Ponzu
1 lb Unsalted Butter, large diced
1/2 Cup Heavy Whipping Cream
To Taste Salt and Pepper
1/2 oz Key Lime Juice
METHOD: Heat the ponzu in a small pot, then add cream and reduce by half. Slowly whisk in the butter until fully emulsified. Season with salt, pepper, and key lime juice. Enjoy :)
